My Quinoa & Black Bean Salad is a personal favorite – packed with protein, fiber, and antioxidants, it’s a perfect choice for a healthy, satisfying meal. Let’s dive in!                                                                                                                                                                                                      Ingredients:
- 1 cup quinoa
- 1 can of black beans, drained and rinsed
- 1 red bell pepper, diced
- 1 cup cherry tomatoes, halved
- 1/2 red onion, diced
- 1 avocado, diced
- 1/4 cup fresh cilantro, chopped
- 1/4 cup feta cheese, crumbled (optional)
- For the dressing:
- 1/4 cup olive oil
- 2 tablespoons apple cider vinegar
- 1 clove of garlic, minced
- 1 teaspoon honey
- Salt and pepper to taste                                                                                                                                                                                                                                                                                      Instructions:                                                                                                                                         1. Rinse the quinoa under running water and cook according to package instructions. Once cooked, let it cool down.                                                                                                                     2. In a large mixing bowl, combine the cooled quinoa, black beans, diced red bell pepper, cherry tomatoes, red onion, avocado, and cilantro.                                                                        3. In a small bowl, whisk together the olive oil, apple cider vinegar, minced garlic, honey, salt, and pepper to make the dressing.                                                                                                        4. Pour the dressing over the quinoa and bean mixture and toss to combine.                              5. If using, sprinkle crumbled feta cheese over the salad.                                                                6.
